First domesticated 6,000-8,000 years ago, amaranth berry was a staple of the Aztecs, representing up to 80% of their caloric consumption. It also figured in their religious rituals. To this day, amaranth grains are toasted, mixed with honey, molasses or chocolate to make a treat called alegr?a, meaning “joy.” A great alternative for those who are gluten intolerant, amaranth berry boosts the nutrition of gluten-free recipes. It is a complete protein as it has all the essential amino acids, even lysine which is not found in most grains. Amaranth can be popped like corn, added to your rice, or cooked like porridge. Include it in your breads, soups and stews.
